Part of processing honey is making sure that the moisture content is in the range to prevent fermentation. We use a refractometer to measure the moisture. This year the honey is around 16% to 16.5 percent moisture,which is ideal. We are looking for between 15.5% to 18%. Last year some was around 20%. This year's honey is very thick and tasty!
